  • Pisco Puro (Pure): Made from a single variety of grape. These are prized for their “varietal expression,” allowing the drinker to taste the specific characteristics of a single vine.

  • Pisco Acholado (Blended): A masterful blend of two or more grape varieties. This is often considered the most balanced style, combining the structure of non-aromatic grapes with the fragrance of aromatic ones.

  • Pisco Mosto Verde (Green Must): The “reserve” of the Pisco world. It is distilled from must that hasn’t fully fermented, meaning there is still residual sugar. This results in a velvet-like texture and a deeper, smoother finish.

The Aromatic Profile: From Earthy to Floral

The Pisco experience is divided by the type of grapes used in production:

  • Non-Aromatic Grapes (e.g., Quebranta, Uvina): These provide the “muscle” of Pisco. Expect notes of hay, banana, dark chocolate, and black pepper. These are the preferred choice for a classic Pisco Sour because they hold their own against citrus and sugar.

  • Aromatic Grapes (e.g., Italia, Torontel, Moscatel): These provide the “perfume.” These Piscos explode with notes of orange blossom, jasmine, tropical fruits, and honey. They are spectacular when sipped neat or used in refreshing highballs like the Chilcano.
